The World Famous Mill

The last few days have been blissfully mindless.  Life is pretty up in the air right now and last week I felt the weight of the world heavy on my shoulders but Thursday I decided to “go with the flow” a bit more and have faith that everything will work out the way it’s supposed to.  And in the meantime my plan is to enjoy my free-time, my family, and the gorgeous summer days.

Friday was leisurely and lovely.  Tate and I stayed Thursday and Friday night at my sister’s house and mid-afternoon Friday my sister, my niece, Tate and I headed to the beautiful Babcock State Park for some recreation.

Babcock is home to one of the most famous mills in the world.

Tate and I have seen pictures of this mill all over the world, most memorably in Mexico and Vietnam!

Tate and I went for a great run while my sis and niece hiked.

It is so gorgeous there, super green and dripping with moss and ferns.  We ran 50 minutes, longest run for me all summer!

Post-run we hopped in the creek for a rinse off.

And then checked out the mill.

They make cornmeal at the mill.  I couldn’t resist buying a bag that was ground Thursday!  Unfortunately, the old-timer running the operation couldn’t tell me if the corn was local or not :(.

I haven’t made anything with it yet but I think a cornmeal-pear cobbler is in my future.

Alright, there is something we need to talk about.  They are green and crispy and snacktastic.  They are kale chips!

These guys are straight goodness.  I rubbed pieces of kale with olive oil and salt and baked on a cookie sheet until nice and crisp.  I have been reading about kale chips on various blogs and recipe sites but it took me too long to try them myself.  Don’t make the same mistake I did! Try them today!  I will admit, they can have a bit of a bitter aftertaste, which I loved but Tate was not as convinced about their amazingness.

These chips pair well with salad, quinoa, fresh salsa, and fresh pesto.

On that note, time for lunch!

Tuesday?

Wow, what a time warp, I was all ready to type “Happy Monday” when it occurred to me that it’s Tuesday!  I must be confused because I spent ALL day yesterday driving to and from Charlottesville, having meetings, and getting the house inspected.  It was a long one and the house DID NOT pass the inspection with flying colors like we had hoped so now we wait to see what the seller will fix…

Today IS Tuesday, which means that I get to teach yoga this morning! My sister teaches a gentle yoga class Tuesday and Thursday morning but she needed to attend a funeral today and I offered to cover her class.  I love teaching and it’s been way too long, it’s going to be a fun morning!

Yesterday was a serious rest day, I barely even walked around.  I will just schedule that into this weeks Mission Get Moving

Week Three

  • 4 yoga sessions
  • 4 runs (at least 35 minutes and a “long run” of 45 minutes or more)
  • 6 days abs/arms
  • 1 cardio dvd or interval workout

Today is a yoga, arms, and either run or other cardio day.
