Turn Words into Action

Watch your thoughts, for they become words. Watch your words, for they become actions. Watch your actions, for they become habits. Watch your habits, for they become character. Watch your character, for it becomes your destiny.

-Tome Krause

My thoughts became my words and my words became my actions!

A few weeks ago I wrote a post about  lacking motivation and momentum in a few areas of my life.  I was ready to make a change and hoped that by putting my intentions out there into the cyberworld-and to all my blog friends-it would help kick my ass into gear.

It worked!

I have two exciting teaching opportunities coming up, new dance connections and performance opportunities, and a new training client!

On July 12th I start a six-week class at ACAC.  The Dance Hour is a modern dance based exercise class that will focus on getting a great full body workout and the amazing feeling of dancing.  Kath is already signed up and has requested we spend the last ~15 minutes of each class building a little bit of choreography and I love the idea!  By the end of the series we will have 2-3 minutes of choreography to really get us moving!  If you are in the Cville area and interested in joining us; the class is open to members and non-members, dancers and non-dancers.  Come on down! More info can be found on this ACAC page.

The lovely Robin Truxel is also interested in having me combine dance and exercise at her gorgeous Pilates studio, Tru Pilates.  We are currently gathering interest for a mat Pilates class that would incorporate Modern and Ballet technique.  C’villians, here’s more info!

I am super excited to get back into the studio and share two of my loves-dance and exercise-with Charlottesville.  Before I moved to Peru in 2009 I was teaching 6-9 classes each week and loved that each day I got to go into a studio and exercise with tons of awesome students.

I did hold some great spare-bedroom-turned-Pilates-studio classes in our apartment in Peru but it’s already been a year and a half since we left Lima!  Man, time flies!  Did June just sprint out the door for anyone else?  Friday is July!

And it’s already 10:30am!  Better sprint out the door myself before it gets too hot for my run!

Berry Bliss

Wow.  I have a new favorite dessert.  Seriously, I’d be happy to forgo cake for the rest of my life if I could eat this on a regular basis.

Actually, from now on I will be eating this on a regular basis. 🙂

Simple. Nutritious. Delicious.

Berry Tart

Makes 4 tarts

Crust

  • 1/2 cup rolled oats
  • 8 dates
  • 1 tablespoon water

Chop dates coarsely.  Process chopped dates and oats in a food processor until crumbly.  Add water and process until sticky.

Chocolate Filling

  • 2 tablespoons unrefined virgin coconut oil (place jar in hot water to liquify if solid)
  • 1 tablespoon cocoa
  • 1 teaspoon bee pollen (optional)
  • stevia or honey to taste (I used 1 packet of Truvia)

Mix cocoa, sweetener, and bee pollen (if using) together.

If using bee pollen just know that it will keep its shape, this is not a problem.  If using honey, melt in microwave or on the stove before adding.

Divide dough into 4 equal size balls.  Line 4 muffin cups with papers.  Press dough into bottom of each paper, making an indent in the center and building up a little ridge around the edges to form a crust.  Spoon 1 teaspoon of chocolate into each crust.  Top with berries/fruit of choice.

Place tarts in fridge for at least 30 minutes to allow chocolate to harden.

Eat more berries while you wait.

I used Wine Berries for these tarts because I just happened to have two big bowls of them in my fridge.

Yesterday Tate and I went into the woods and came out with a haul of berries, scratched legs, stained fingers, and antioxidant-happy tummies.  I’ve already frozen a few pints, eaten them in overnight oats, and the stash is still flush!  Love berry season.

Tarts.  When the chocolate is firm, remove from paper and serve.

These tarts are soft and doughy with a nice crunchy contrast from the berry seeds.  They are sweet from the dates, rich from the coconut oil, and fresh from the berries.  In other words, everything I want out of dessert!
